A sweet indulgence

Perhaps I should have posted this earlier in May, when strawberries were in abundance and fresh.  Since I didn't, you'll have to go with what you've got and enjoy it anyway!  I have taken this recipe from one of many books I have (its a sickness).  Its called Fat Free Desserts.  This recipe is off page 84.  That's about as technical as it gets when it comes to quoting resources for me haha sorry all you MLA style or AP style researchers reading my little slice of cooking blog.  Here goes my favorite cake recipe:
Strawberry Coconut Cake
Cake Ingredients:
Butter flavored cooking spray
3 cups flour
1/2 teaspoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
2 cups sugar
8 egg whites
1 16-ounce package unsweetened frozen strawberries, thawed
1/4 cup skim milk
2 teaspoons vanilla extract
1 teaspoon coconut extract
1 tablespoon coconut flakes
Cake directions:
Preheat oven to 325 degrees.  Spray a Bundt pan* with cooking spray.  Use paper towel to absorb the excess if you get a little carried away.
In a medium sized bowl, combine flour, baking powder, salt and cinnamon and mix well.  In a large bowl, combine sugar, egg whites, strawberries, milk, vanilla and coconut extracts, and coconut flakes and mix well.  Mash the strawberries as you are mixing.  Gradually add dry mixture to wet.**  Pour into Bundt pan and bake for 55 minutes.  Allow cake to cook in cake pan for 10 minutes before attempting to remove it. ***
Glaze Ingredients:
1 cup powdered sugar
1/2 teaspoon vanilla extract
1/4 teaspoon coconut extract
Pinch of salt
2 1/2 tablespoons plain nonfat yogurt
Glaze directions:
Combine all ingredients in small mixing bowl.  Using an electric mixer, blend well.  Drizzle over cake, once it has been removed from pan.
* This is what a Bundt pan looks like, for those who aren't sure.
** I usually don't use a mixer of any sort.  Wooden spoons have worked great and then your strawberries don't get overly mashed.
*** The cake is going to be VERY heavy.  It has a lot of liquid in it and if you flip it too soon, then it comes apart.  Don't be surprised by the weight of it.  Also, while it may be lower on the fat scale, it does tend to be very rich so small pieces work great.  I like to sprinkle the glazed top with some coconut as a garnish.
