Key Lime Pie

Since the sun has finally decided to show it's smiling face, here's one of my favorite pies that brings a smile to MY face! :)  It is low-fat, so you don't feel too guilty indulging a little bit.

Key Lime Pie
Crust Ingredients: *
Butter flavored cooking spray
15 fat free wheat crackers
2 reduced fat vanilla cookies
2/3 cup powdered sugar
2 tbs fat free margarine
Crust Directions:
Put crackers, cookies and powdered sugar in a blender.  Process to make fine crumbs. Spray the bottom of a 9-inch pie plate.  Sprinkle crumbs into pie plate.  In a small cereal bowl, melt margarine in the microwave (about 20 seconds on 70% power).  Pour over crumbs and mix until evenly moistened.  Only press onto the bottom of the pan, not the sides.  Set aside.
Filling Ingredients:
16 oz plain nonfat yogurt, drained
1 cup nonfat sour cream
1/4 tsp salt
1 tsp vanilla extract
2 tbs light corn syrup
1 cup nonfat dry milk powder
1 tbs cornstarch
1/3 cup skim milk
2/3 cup sugar
1 small box unflavored gelatin
1/2 cup Key Lime juice
Filling directions:
Combine yogurt, sour cream, salt, vanilla, corn syrup and dry milk in a large bowl and mix well.  In a medium sized sauce pan, mix cornstarch with skim milk.  Add sugar, gelatin and lime juice to milk mixture.  Bring to a boil, stirring constantly for 1 minute.  Add hot mixture to yogurt mixture in large bowl.  Stir well.  Pour filling over crust and refrigerate until completely chilled- approx 4-5 hours.
* If you want to use a regular graham cracker crust, you can do that.  It just adds fat, but that might not matter if it saves you some time.
