Three Cheese Macaroni

I have a fairly decent recipe for mac and cheese.  I'd even go so far as to say its fabulous.  However, at this year's Dutch Oven competition one team brought in a side dish that I was raving about for days.  I hunted down the recipe, made a few changes and here's the result:

Three Cheese Macaroni
Ingredients:
1 package macaroni noodles, boiled and drained
8 ounces sour cream
1 1/2 cups cottage cheese, drained
8 ounces cream cheese
1 1/2 cups sharp cheddar cheese, grated
2 tablespoons onion, finely chopped

Directions:
Boil macaroni according to directions on package.  Rinse lightly and set aside.
In large sauce pan, melt together remaining ingredients.  Melt over medium heat, stirring constantly to avoid burning.  Once you have a smooth sauce, add noodles and coat.  Heat through and serve.

Its as simple as that!  Enjoy!
