Not your regular Mashed Potatoes

I realize I've been neglecting my little food blog and I apologize.  Its not like I ran out of recipes.  I just felt like I didn't have anything that delicious or exciting to share!  However, I've downloaded a new app on my phone and tried out one of the side dishes tonight for dinner.  It was a hit, so I thought I'd share.

The app is called iFood.  It will pull up "What's for dinner tonight?" and then give you not only the recipe, but the shopping list.  You can search for recipes, add them to your recipe box that it automatically alphabetizes for you, and then get shopping lists for what you want to cook that day or week or whatever.  I'm telling you what- I think its my new favorite app!  There's also reviews for each recipe.

Anyway, my family gets together every first Sunday of the month (Fast Sunday), for dinner.  We take turns with parts of the meal and it was my turn for some kind of potato dish.  While I love mashed potatoes, I wasn't really wanting to do the same old flakes or boil real ones and then mix them up.  So I turned to iFood and this is what I got.  YUMMY!

Potato, Carrot and Cauliflower Mash
(Don't be scared...)
Ingredients:
5 lb bag of red potatoes, washed, peeled and diced
1 small bag of petite baby carrots
1 bag of frozen cauliflower florets
6 cans chicken broth
1 brick cream cheese, softened
5 cloves garlic, minced
1 tbs fresh rosemary, diced (I used 2 tbs Pampered Chef Rosemary mix seasoning and it was great)

Directions:
Boil potatoes, carrots and cauliflower in chicken broth until carrots are soft.  Drain vegetables, saving 1 cup of broth.
Place vegetables in a large bowl or back in your stock pot. Add cream cheese, garlic and spices.  Beat with hand mixer, gradually adding reserved chicken broth, until desired consistency.

This is where their recipe ends.  However,  I placed my potatoes in a 9x13 pan and sprinkled some sharp cheddar cheese over the top.  Then, I put my pan under a broiler until the tips of the potatoes and the cheese were crisp.  SO GOOD!

The thing I loved about this was the texture of the added vegetables to regular old mashed potatoes, the flavor of cooking in chicken broth and also the hint of rosemary.  That's not one of my favorite spices so I was doubtful but it works.
