* Freeze it. Seriously. Wash it. Slice it up however you want. Grate it, even. Divide it up into freezer safe Ziplocs and you'll have fresh tasty vegetables all winter.
* Fry it. MMMMMM one of my favorites. Wash. Slice into rounds. Dip in beaten egg. Dip in bread crumbs. Fry in enough olive oil to cover the bottom of your pan. Season with salt and pepper.
* Make bread. Here's my zucchini bread recipe- not a secret!
* Grill it. Wash. Slice into 3 inch strips. Place in a bowl with some olive oil, sea salt and black pepper. I also add a little lemon juice. Place on your grill on a lower setting. Turn as necessary. Tasty treat!
* Make this cake: (I've seen several versions of this floating around, FYI).
Chocolate Zucchini Cake
Ingredients:1/2 cup butter
1/2 cup vegetable oil *
1 3/4 cup white sugar
2 eggs
1/2 cup buttermilk**
1 teaspoon vanilla
2 cups flour, sifted
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon salt
1/3 cup baking cocoa
2 1/2 cups zucchini, grated
1/4 cup walnuts, chopped and optional
1/2 cup chocolate chips
Directions:
Preheat oven to 325 degrees.
Cream together butter, vegetable oil and sugar. Add eggs, buttermilk and vanilla. Blend well. In separate bowl, sift dry ingredients together. Blend dry ingredients into the butter mixture. Add grated zucchini, chocolate chips and walnuts. Mix well. Spread in a greased and floured 9x13 pan.*** Bake in preheated oven for 45 minutes. Cool and dust with powdered sugar.
* You can omit the oil if you don't want such a moist cake. I like it better without.
** No buttermilk? Use 1 cup of regular milk and 1 tablespoon lemon juice. Let set for 5 minutes. Use this ALL the time.
*** I have used a bundt pan before and it takes a lot longer to cook. FYI
So there you have it. What to do with the obnoxious amounts of zucchini! Happy Eating!

Hooray! Hooray!! I've been waiting for this post for a while now! I've never made zucchini cake before. I think I need to give it a try. PLUS, I want to try frying zucchini. Sounds yummy! I will let you know how it goes! (Praying kitchen doesn't explode or start on fire or something...)
